Determination of Acid Value of Food Flavorings by Fully Automated Potentiometric Titration


I. Introduction

Flavoring is a mixture artificially blended compound containing two or more, even dozens, of flavorings (sometimes also containing suitable solvents or carriers), possessing a specific aroma. To achieve a particular aroma or fragrance type, a flavoring process is necessary. This blended flavoring is called flavoring. When flavoring is used to enhance the aroma of food, its safety indicators must be strictly controlled, with acid value being a commonly tested item. This method uses the JH-T6 fully automated potentiometric titrator from Shanghai Jiahang to determine its content. It exhibits good repeatability, a clear endpoint jump, and can accurately determine its content.

II. Instruments and Reagents

2.1 Instruments

JH-T6 fully automated potentiometric titrator, non-aqueous pH composite electrode, analytical balance, etc.

2.2 Reagents

Ethanol (AR), sodium hydroxide standard titrant (0.05 mol/L).

III. Experimental Methods

3.1 Sample Detection

Accurately weigh 1.0g ± 0.1g of sample (accurate to 0.00001) into a 100mL titration vessel. Add 50mL of ethanol to dissolve and stir well. Place the non-aqueous pH composite electrode into the test solution. Set the instrument parameters and titrate with sodium hydroxide standard titrant (0.05mol/L) until pH=8.0. Record the volume of sodium hydroxide standard titrant consumed at the titration endpoint. Perform a blank experiment simultaneously.

4.2 Conclusion

The JH-T6 fully automatic potentiometric titrator from Shanghai Jiahang can quickly and accurately detect the acid value content of fragrances, with good repeatability, meeting the experimental testing requirements.
